A Dry Rabbit original · The holidays and New Year's Eve
Midnight Pomegranate Toast
The stroke-of-midnight pour: alcohol-free sparkling wine with a little pomegranate, a twist of orange and a squeeze of lemon, in a flute.
Alcohol-free. Made with alcohol-free bottles that may carry up to 0.5% ABV.
Make it
You’ll need
- 4 oz (120 ml) NA sparkling wine, chilled
- 1 oz (30 ml) pomegranate juice
- ¼ oz (7.5 ml) fresh lemon juice
- 1 strip orange peel
Garnish: The strip of orange peel, and three pomegranate seeds sunk in the glass.
Method
- Pour the pomegranate juice and lemon juice into a chilled flute.
- Top slowly with the sparkling wine, tilting the glass so it keeps its bubbles.
- Squeeze the orange peel over the top, skin side down, and drop it in.
Make ahead. For a table of ten, stir 10 oz of pomegranate juice and 2½ oz of lemon juice together an hour ahead, chill it, and pour 1¼ oz into each flute before the bottles open at 11:59.

How we checked it
Dry Rabbit originals are developed and checked with AI, against the 42 tested recipes in The Dry Rabbit Cocktail Guide: sweetness and acidity per ounce, sweet to sour, dilution and the drink’s size against drinks made the same way, every ingredient’s alcohol, and whether you can buy it. One that falls outside the book’s range is reworked before it’s published.
The check’s notes on Midnight Pomegranate Toast
Built and topped, like the book's Esplanade Spritz. Sparkling wine is the whole drink, so pomegranate and lemon only tint and sharpen it: sweetness 0.10 and acidity 0.18 a finished ounce, sweet to sour 0.54, inside the book's built drinks (0.05 to 0.20, 0.01 to 0.17 with the check's margin, and 0.32 to 2.62), and 5.3 oz in a flute, no ice. Pomegranate is tart, so only an ounce goes in. Sweetness depends on the bottle: a dry alcohol-free sparkling wine is assumed. Pomegranate juice, lemons and oranges are at every supermarket; the sparkling wine is on the Bottle Shelf. Alcohol-free sparkling wine can contain sulfites, and the page says so. Under 0.5%.
