A Dry Rabbit original · Halloween
Hare Raiser
A blood-red sour for Salem season: pomegranate and black tea, a whisper of cinnamon, and a ginger crackle on top.
Alcohol-free. Nothing in it has alcohol.
Make it
You’ll need
- 2 oz (60 ml) pomegranate juice, 100% juice
- 1 oz (30 ml) strong black tea, cooled
- ¾ oz (22.5 ml) fresh lime juice
- ¼ oz (7.5 ml) cinnamon syrup
- 2 oz (60 ml) spicy ginger beer, chilled
Garnish: A cinnamon stick and a spoonful of pomegranate seeds.
Method
- Shake the pomegranate juice, tea, lime juice and cinnamon syrup with plenty of ice until the tin frosts over, about 10 seconds.
- Pour through a strainer into a tall glass packed with fresh ice.
- Top with the ginger beer and lift it once with a bar spoon.
Rabbit’s note. The tea is the backbone: its tannin gives the grip a spirit would. Brew two bags in a cup of water for five minutes, then chill it.

How we checked it
Dry Rabbit originals are developed and checked with AI, against the 42 tested recipes in The Dry Rabbit Cocktail Guide: sweetness and acidity per ounce, sweet to sour, dilution and the drink’s size against drinks made the same way, every ingredient’s alcohol, and whether you can buy it. One that falls outside the book’s range is reworked before it’s published.
The check’s notes on Hare Raiser
Shaken and topped, like the book's Cottontail Collins and Carrot & Stick. Pomegranate brings sugar and acid of its own, so the syrup is only ¼ oz: sweet to sour lands at 0.98, inside the book's shaken range (0.50 to 1.08), and sweetness per ounce at 0.17, a touch above the book's sweetest sour (0.16) and inside the check's margin, since the ginger beer brings sugar too. Black tea adds the dry grip that keeps it from tasting like juice; ginger beer adds heat and lift without more sugar. Everything is at a supermarket (POM Wonderful, any black tea, any spicy ginger beer); the syrup takes 10 minutes. 0.0%.
