Make it

You’ll need

  • 2 oz (60 ml) fresh apple cider
  • 1 oz (30 ml) NA bitter aperitivo
  • ¼ oz (7.5 ml) fresh lemon juice
  • 2 oz (60 ml) NA sparkling wine, chilled

Garnish: A thin slice of red apple, tucked against the glass.

Method

  1. Pack a big wine glass with ice.
  2. Add the cider, aperitivo and lemon juice and give it one turn with a spoon.
  3. Top with the sparkling wine.

Swap. Soda water in place of the sparkling wine makes it lighter, drier and less fizzy on the wallet.

How we checked it

Dry Rabbit originals are developed and checked with AI, against the 42 tested recipes in The Dry Rabbit Cocktail Guide: sweetness and acidity per ounce, sweet to sour, dilution and the drink’s size against drinks made the same way, every ingredient’s alcohol, and whether you can buy it. One that falls outside the book’s range is reworked before it’s published.

The check’s notes on Russet

A built spritz like the book's Esplanade Spritz and Crepuscular, but the fruit leads: fresh cider is the base and the aperitivo is the bitter edge. Sweetness per ounce 0.17 and sweet to sour 1.25 sit inside the book's built drinks (0.05 to 0.20, and 0.32 to 2.62); the ¼ oz of lemon keeps the cider from going flat. In New England, cider means fresh-pressed apple juice; the page says so. The aperitivo and sparkling wine are on the Bottle Shelf. Under 0.5%.
