Make it

You’ll need

  • 1½ oz (45 ml) NA whiskey alternative
  • 1 tbsp pumpkin purée, canned
  • ¾ oz (22.5 ml) fresh lemon juice
  • 2 tsp maple syrup
  • 1 pinch pumpkin pie spice

Garnish: Freshly grated nutmeg.

Method

  1. Shake everything very hard with ice for 15 seconds, so the pumpkin turns silky.
  2. Pour through a fine tea strainer into a chilled coupe, so no pumpkin fibers get through.

Swap. No NA whiskey? Use 1½ oz of strong, cooled black tea instead. It's 0.0% that way, and a little lighter.

How we checked it

Dry Rabbit originals are developed and checked with AI, against the 42 tested recipes in The Dry Rabbit Cocktail Guide: sweetness and acidity per ounce, sweet to sour, dilution and the drink’s size against drinks made the same way, every ingredient’s alcohol, and whether you can buy it. One that falls outside the book’s range is reworked before it’s published.

The check’s notes on Harvest Hare

A sour in the shape of the book's Velveteen, with pumpkin purée for body in place of a foam. Maple is 60 percent sweeter than simple syrup, so it's 2 tsp, not ½ oz: sweetness per ounce comes to 0.16 and sweet to sour to 0.81, both inside the book's shaken drinks (½ oz of maple measured 0.21, too sweet, and was cut). The long, hard shake and double strain keep the purée from feeling grainy. Canned pumpkin and pumpkin pie spice are at every supermarket in October; the NA whiskey is on the Bottle Shelf. Under 0.5%.
