Pistachio Snow Foam

A warm cup with cold, nutty foam: hot chai under a cap of pistachio-oat foam that melts in as you sip.

Alcohol-free. Nothing in it has alcohol.

Make it

You’ll need

  • 4½ oz (135 ml) chai tea, strongly brewed, hot
  • 1 tsp maple syrup
  • 1 pinch ground cinnamon
  • ¾ oz (22.5 ml) pistachio syrup
  • 1½ oz (45 ml) oat milk, cold

Garnish: Finely chopped pistachios on the foam.

Method

  1. Pour the hot chai into a warmed mug and stir in the maple syrup and the cinnamon.
  2. Shake the cold oat milk and pistachio syrup hard in a jar for 30 seconds, until it has doubled and holds a soft shape.
  3. Spoon the foam over the chai.

Make ahead. The syrup keeps two weeks in the fridge. Use barista oat milk for the thickest foam.

The tools

The pantry

Make ahead

  • Pistachio syrup. Simmer 1 cup of shelled, unsalted pistachios, 1 cup of sugar, 1 cup of water and a pinch of salt for 5 minutes, then leave it off the heat for 30 minutes. Strain, pressing lightly; the pistachios are good on oatmeal. Keeps about 2 weeks in the fridge (our estimate).

How we checked it

Dry Rabbit originals are developed and checked with AI, against the 42 tested recipes in The Dry Rabbit Cocktail Guide: sweetness and acidity per ounce, sweet to sour, dilution and the drink’s size against drinks made the same way, every ingredient’s alcohol, and whether you can buy it. One that falls outside the book’s range is reworked before it’s published.

The check’s notes on Pistachio Snow Foam

Built warm, like the book's Winter Coat, with a foam on top in the manner of a cold-foam coffee. Sweetness 0.17 a finished ounce, inside the book's warm drinks (0.12 to 0.21); acidity is nil, as with the book's tea drinks, and the foam adds no acid. The first draft, with three ingredients and ½ oz of syrup, measured 0.08, thinner than any of the book's warm drinks, so it gained a teaspoon of maple, a pinch of cinnamon and more syrup; at 6 oz of chai it overran the book's 6¼ to 7½ oz, so the chai went to 4½ oz. 6.9 oz in a mug. The syrup's numbers are our estimate (1 cup of sugar to 1 cup of water), and the chai is assumed unsweetened. It contains tree nuts and caffeine, and the page says so. Pistachios, chai and oat milk are at every supermarket. 0.0%.
