A Dry Rabbit original · Thanksgiving

Bog Light

A still, stirred, bittersweet sipper of cranberry and rosemary over strong rooibos. Not sweet, and made for the end of the meal.

Alcohol-free. Nothing in it has alcohol, unless you add the optional Dhos Bittersweet, which may carry up to 0.5% ABV; Dhos Bittersweet doesn't state its ABV.

Make it

You’ll need

  • 2 oz (60 ml) strong rooibos tea, cooled
  • ½ oz (15 ml) cranberry–rosemary cordial
  • ¼ oz (7.5 ml) verjus blanc
  • 2 dashes alcohol-free aromatic bitters
  • 2 drops saline solution
  • 1 oz (30 ml) Dhos Bittersweet (non-alcoholic; ABV not stated), in place of 1 oz of the rooibos (optional)

Garnish: A frozen cranberry and a coin of orange peel.

Method

  1. Stir the rooibos, cordial, verjus, bitters and saline with plenty of ice for 20 seconds.
  2. Strain it over one big, clear block of ice in a short glass.

Swap. With Dhos Bittersweet in place of an ounce of the rooibos it's more bitter and a little rounder. Either way, it's one to sip slowly.

Allergens and caffeine

  • No major allergens, and no caffeine: rooibos has none.
  • Verjus can contain sulfites.
  • Dhos Bittersweet, if you use it, is non-alcoholic but doesn't state its ABV; check its label for what's in it.

Every brand we name is optional. Dhos Bittersweet is non-alcoholic, but no page we could read states its ABV: its own site is behind an age gate, and copies of its pages disagree (0.0% on the product pages, under 0.5% and mostly 0.2 to 0.3% in its FAQ). (Read Oct 17, 2026.)

Make ahead

  • Cranberry–rosemary cordial. Simmer 2 cups of fresh or frozen cranberries with 1 cup of sugar, 1 cup of water and the peel of half a grapefruit until the berries pop, about 8 minutes. Off the heat, add 2 rosemary sprigs and steep for 10 minutes, then strain without pressing, so it stays clear. Keeps about 2 weeks in the fridge (our estimate).
  • Saline solution. Stir 1 teaspoon of fine salt into 3 tablespoons of warm water until it disappears. A drop or two makes fruit taste brighter, and it lasts for months.

How we checked it

Dry Rabbit originals are developed and checked with AI, against the 42 tested recipes in The Dry Rabbit Cocktail Guide: sweetness and acidity per ounce, sweet to sour, dilution and the drink’s size against drinks made the same way, every ingredient’s alcohol, and whether you can buy it. One that falls outside the book’s range is reworked before it’s published.

The check’s notes on Bog Light

Rejected and reworked. As approved (1 oz cordial, 1 oz red verjus, ½ oz rooibos, ½ oz white verjus) it measured sweetness 0.33 and acidity 0.26 a finished ounce, and with Dhos Bittersweet in place of the red verjus and rooibos, 0.30 and 0.15: either way a sour served stirred, where the book's stirred drinks run 0.03 to 0.20 sweet and never above 0.07 sour. Reworked to keep what was approved (stirred, still, bitter-led, cranberry and rosemary, not sweet): strong rooibos is the base, the cordial drops to ½ oz and the verjus to ¼ oz, and two dashes of alcohol-free aromatic bitters lead. Sweetness 0.16, acidity 0.075, 3.4 oz after a 20-second stir, and it shares two ingredients with any one book recipe at most. The cordial's numbers are our estimate (1 cup of sugar to 2 cups of cranberries, which are very tart). Dhos Bittersweet, the optional swap, is non-alcoholic but no page we could read states its ABV, so the page says so. Cranberries are the state's own in November; the verjus and bitters are on the Bottle Shelf. 0.0%.
